Blueberry Pancake

INGREDIENTS

2 cups RISE Super Flour
2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
4 eggs (separated)
2 tbsp sugar
1 1/2 cups milk
1/2 tbsp vanilla extract
3 tbsp unsalted butter
1 cup Blueberries

PROCEDURE

Preheat waffle iron
Whisk Egg yolks, sugar, milk, vanilla and butter
Mix in flour, baking soda, salt and nutmeg
Fold in whisked egg whites and blueberries
Use a ladle to scoop the mixture into the waffle iron
Cook for 4 minutes until crispy outside
Serve with smuggled Maple syrup
